In this sense, white tea represents the least processed form of tea, since green, oolong and black teas undergo withering before various degrees of oxidation. White tea also contains a higher proportion of buds, which are covered with fine ‘silvery’ hairs that impart a light white/grey color to the tea. White tea brews to a pale yellow/light red color, and has a slightly sweet flavor with no ‘grassy’ undertones sometimes associated with green tea.’ ‘Researchers at the LPI (Linus Pauling Insitute) tested four types of white tea for their ability to inhibit mutations in bacteria, and subsequently examined the protective properties in a rat colon cancer model. In the former studies using bacteria, white teas were generally more effective than green tea in inhibiting mutagenicity (mutagenicity is a result of unrepaired/misrepaired DNA damage and an early step in the process leading to cancer). White teas contained many of the expected polyphenols, some of which were present at higher concentrations than in green tea brewed under the same conditions. Other constituents, such as caffeine, also were present at higher levels in white tea.’ ‘These data are highly preliminary, and cannot be extrapolated to human cancer prevention or treatment. They indicate that white tea, like other forms of tea, can block the DNA damage caused by some compounds using a test tube assay with bacteria as indicator organisms.’ Both white and Green tea should be steeped in very hot, but not boiling, water. Boiling water will scorch the delicate flavor, rendering it bitter. Green tea comes mainly from China, Japan, Taiwan and, to a lesser degree, India. The critical difference between green and black tea is that green tea leaves are not allowed to ferment. Green tea is, instead, steamed, rolled and fired. Green tea is the natural dried leaves of the tea plant, Camellia sinensis. Black tea is oxidized green tea. The phrase ‘Black Tea’ is also used as a generic name for all Camelia sinensis teas. The major Black Tea types, from the traditional black tea evergeen (Camellia sinensis), classified according to processing method, include: fermented, or black, tea, producing an amber-coloured, full-flavoured beverage without bitterness; semi-fermented, or oolong, producing a slightly bitter, light brownish-green liquid; and unfermented, or green, tea, resulting in a mild, slightly bitter, pale greenish-yellow beverage. A report published in the Chinese Medical Journal indicates that raw glutinous rehmannia has been shown to be effective in the treatment of rheumatic and rheumatoid arthritis. Also, glutinous rehmannia and licorice have been shown to be a good combination. A report published in the New Pharmacological Journal indicates obvious improvements in cases of contagious hepatitis treated by injections of raw glutinous rehmannia and raw licorice. Presumably, the steaming process that yields cooked rehmannia breaks down the ordinary starches in the root to simple sugars. The combination of raw rehmannia, anemarrhena, plus licorice was fed to rats who were administered dexamethasone for two months (20); this drug impairs adrenal function. The herbs promoted growth, lowered plasma glucose, decreased plasma-free fatty acids, and increased plasma cortisone, suggesting a protective effect for the adrenals. The two forms that are generally available to practitioners everywhere are dried rehmannia root (gan dihuang or gansheng dihuang, commonly referred to as sheng dihuang, and, in English, usually called raw rehmannia), and cooked rehmannia root (shu dihuang). Raw rehmannia root has been dried—in the sun or using an oven—to the point that it preserves well, and cooked rehmannia root is currently prepared by soaking it in a solution of water and rice wine (30%) and steaming it for eight hours (sometimes a full day). The effects of rehmannia can be explained in relation to the iridoid glycosides, which are currently the only known active ingredients for the dosages of rehmannia that are used (rehmannia also contains some immune-modulating polysaccharides, but the amounts present appear to be small).
